Everyday Salad

I used to be a salad-hater, and then a few years ago I hit upon a combination of ingredients I really like, and now I eat it all the time.

This is a salad I eat probably 4 days a week for lunch, and we often eat it once a week for dinner (I just make it bigger).

There's nothing fancy to it, but it provides a variety of nutrients, and I always have the ingredients on hand. When I'm feeling extra-prepared, I make several in advance so that I have lunch ready to go and don't have to worry about all of the chopping when the kids are hanging on my legs.

I'm not including amounts because you can use however much you like to suit your tastes--this is more of an idea for a salad than a real recipe.

Everyday Salad
There's nothing too fancy about this salad, but the variety of ingredients keeps it from getting boring!
  • romaine lettuce, chopped
  • fresh baby spinach, chopped
  • carrots, sliced
  • bell pepper, diced
  • cucumber, diced
  • cherry tomatoes, halved
  • cooked black beans (or chickpeas)
  • cooked loose kernel organic corn
  • olives (green, black, or kalamata)
  • almonds, sliced (or walnuts, pecans, pumpkin seeds, sunflower seeds, or pine nuts)
  • feta cheese crumbles or Parmesan slivers (optional)
  • your favorite vinaigrette dressing (watch out for sugar and unhealthy oils)
1. Combine all ingredients!
