Fruit & Sunbutter Roll-Ups




Many schools these days are becoming nut-free zones due to the rise in dangerous food allergies. Because my children eat a lot of peanut butter, I wanted to explore alternatives so that we wouldn't have to completely cut out certain lunch and snack staples, so I recently picked up a jar of sunbutter, which I had been meaning to experiment with for a while anyway.

For those of you who are unfamiliar with it, sunbutter is a peanut butter-like spread made from sunflower seeds, so you get the basic qualities of peanut butter without the allergens. I'm working on a nutrition post about nut butters and will go into more specifics there, but we've been pleased with sunbutter so far.

It tastes very much like sunflower seeds, so if you like those, you'll like sunbutter.

Here's a super-easy, super-fast little recipe (Can you even call this a recipe? It's more like an idea because it is just so incredibly simple.) that is great for sending to school for snack time or lunch. It would also be perfect for an after-school snack.

Fruit & Sunbutter Roll-Ups
This little snack is a great alternative to peanut butter and jelly and combines whole grains, protein, healthy fat, and fruit.
Ingredients
  • 1 whole wheat tortilla
  • 2 T sunbutter
  • fruit, sliced thinly (bananas, strawberries, pears, etc.)
Instructions
1. Spread sunbutter on tortilla.2. Layer fruit over sunbutter.3. Roll up tortilla and slice.
