Simply Delicious Tomato Basil Soup



Tomato basil is about as simple as a soup can get, yet it is so satisfying and such a delicious complement to sandwiches or salads.

This recipe has just a few ingredients but serious flavor, and it's so easy to make. Forget the canned soup--make this fresh version and taste the difference!

Serve it with a simple salad or your favorite grilled sandwich, like my Hummus and Roasted Vegetable Panini.

Simply Delicious Tomato Basil Soup
This soup is so simple yet so flavorful, and the crushed red pepper adds a definite zip!
Ingredients
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 32 oz vegetable broth
  • 28 oz diced tomatoes
  • 1/8 t crushed red pepper
  • 1/2 t sea salt
  • 1/3 c fresh basil, chopped
Instructions
1. In large stockpot, saute onion in 1 T of water for 3-5 minutes or until translucent.2. Add garlic and saute for 1 more minute.3. Add vegetable broth, diced tomatoes, red pepper, salt, and basil, and bring to a boil.4. Reduce heat and simmer for 20 minutes.
