I love having muffins on hand for a quick breakfast or snack, so I usually always have a batch in the freezer. The problem is that some muffins are really just cake without the icing, so you have to be mindful of the ingredients you're using.

Here's a recipe that incorporates bananas, pumpkin, and carrots along with Greek yogurt and some healthy fats and grains.

Fruit and Veggie Spice Muffins
These flavorful muffins are loaded with bananas, pumpkin, and carrots to give you a nutrient boost as you start your day.
Ingredients
  • 1/4 c coconut oil, melted
  • 1/4 c Greek yogurt, plain and fat-free
  • 1/3 c honey
  • 2 bananas, mashed
  • 1/2 c pumpkin puree
  • 2 carrots, grated
  • 2 eggs, beaten
  • 1 c whole wheat flour
  • 1/2 c ground flaxseed
  • 1 t baking soda
  • 1 t cinnamon
  • 1/4 t allspice
  • 1/4 t ground ginger
  • 1/4 t ground nutmeg
  • 1/2 t salt
  • 1/2 c pecans, chopped
Instructions
1. Preheat oven to 375 degrees Fahrenheit and prepare muffin tins with parchment paper liners.2. In large bowl, whisk oil, yogurt, honey, bananas, pumpkin, carrots, and eggs until combined.3. In separate bowl, combine flour, flaxseed, baking soda, and all spices. 4. Combine wet and dry ingredients; stir until just combined. Fold in pecans.5. Spoon batter into muffin cups. Fill about 2/3 full.6. Bake for 15-20 minutes or until tops spring back when pressed.
